Smoked and Cured

All of our smoked and cured items can be naturally cured without added chemical nitrates or nitrites.

Andouille - Garlic, black pepper and thyme.  All pork, natural casing.

Bacon - Dry rubbed and smoked over hickory.

Pepper Bacon - Coated with cracked black pepper.

Cheddarwurst -  Sharp cheddar cheese and a bit of spice.  All pork, Natural casing.

Chicken Cheddarwurst - All chicken, no pork, natural casing.

Mexican Chorizo - Well spiced, cured and smoked.  All pork, natural casing.

Portuguese Chorizo - Cured with red wine and heavily spiced.  All pork, natural casing.

Corned Beef - Beef brisket cured for a full week, cooked with pickling spices.

Kielbasa - Garlic, marjoram, and black pepper.  All pork, natural casing.

Lebanon Bologna - All beef, fermented and smoked.  Tangy flavor and drier texture.

Beef Salami - All beef, seasoned, cured, fully cooked, and lightly dried.

Cotto Salami - All pork, lightly seasoned and garnished with peppercorns.

Pastrami, Brisket - Rubbed with spices and smoked over hardwood. Well marbled with a peppery bite.

Pastrami, Top Round - Leaner and suitable for cold sandwiches.

Canadian Back Bacon - Dry cured and smoked over hickory.  For pan-frying

Smoked Pork Loin - Cured and smoked.  Well trimmed.

Pancetta - Rolled and dry cured Italian bacon.

Turkey Breast - Fully cooked and smoked.

Whole Smoked Turkey - Ready to heat and eat.  A great option for a holiday dinner.  Seasonal item.

Smoked Duck Breast - Fully cooked.  Can be served hot or cold.

Bramlett Farms Trout - Georgia mountain trout, salted and hickory Smoked.

Gravlax - Organic Scottish salmon.  Cured and pressed. Serve sliced very thin with capers. Very buttery and delicate.

Sausages - Fresh

Italian, Sweet - Fennel seed, garlic and black pepper.  All pork, either bulk or natural casing

Italian, Spicy - spiked with red pepper flakes and cayenne.  Either bulk or natural casing.

Italian, J.K’s - Medium hot.  Bulk or natural casing.

Italian, The “Roselle”- The better half.  Our J.K.’s medium hot with white wine and pecorino, asiago, and parmesan cheese.  Natural casing.

Bratwurst - Mildly seasoned.   All pork, natural casing.

Bratwurst, Oktoberfest - A true brat.  Veal and pork with cream, lightly seasoned.  Natural casing.

Kielbasa - Garlic, black pepper, and Marjoram.  All pork, natural casing.

Kielbasa, Spicy - A generous amount of black pepper and cayenne.

Bangers, English - Fresh pork with nutmeg and spices, natural casing.

Bangers, Irish - Cream and black pepper.  Smaller in diameter, natural casing.

Chorizo, Mexican, Mild - A blend of garlic, ancho and guajillo chili’s.  All pork, bulk or natural casing.

Chorizo, Mexican, Picoso (Spicy) - Bulk or natural casing.

Dried, Semi Dried and Dry Cured

Landjager - The Swiss Army sausage. All beef, fermented and cold smoked.  Natural casing.

Sopressata - Heavily spiced and dried. All pork, natural casing.

Chorizo - Fermented and cold smoked. Highly seasoned. All pork, natural casing.

Pepperoni - A Highly Seasoned mixture of pork and beef, lightly smoked and dried.

Peppered Beef Sticks - Smoked and dried with a black pepper bite. All beef.

Beef Jerky - Hand sliced, smoked and dried. We offer several flavors:

regular, spicy, teriyaki and chipotle.
